Recipe Time - Smoky Carrot and Lentil Salad

We sat down with @gemtakesfoodpics to discuss our ultimate recipes to take in our reusable food boxes and we think she came up with an amazing one! Here is everything you’ll need for her Smoky Carrot and Lentil Salad recipe:

• 250g cooked lentils
• 4 carrots
• 1 tsp smoked paprika
• 1 tsp cumin
• 1 tbsp coconut sugar
• 2 tbsp dill, torn apart
• 3 celery stalks, chopped
• 3 red spring onions, chopped & sliced
• 1 orange, juiced
• 1 tbsp olive oil
• salt and pepper to taste

Simply follow these step by step instructions to try this amazing recipe:

1. Slice your carrots up and roast them in the oven at 200c with olive oil, smoked paprika, cumin and coconut sugar for 20-30 minutes.
2. Cook your lentils whilst they roast.
3. Add your lentils, carrots and extra veg into your food box and mix well (feel free to add anything from your fridge - this salad is great for customising).
4. To make the fresh citrus dressing, juice your orange and add 1 tbsp of olive oil. Pour this over your veggie salad and add salt and pepper to season.
5. Pop the lid on and give your salad a good shake. This is ready to go straight away or you can prepare multiple servings and leave them in the fridge to last you a few meals!
